Green Curry Asparagus

"Simple and delicious recipe to do with a favorite vegetable - asparagus."

16 oz – fresh asparagus – cut into thick slices

3/4 tsp – sugar

1 tsp – salt

1 tsp– light soy sauce

2 cloves garlic – crushed or sliced

2 tbs – cooking oil

1 1/2 tbs – CurryFresh Green Curry Paste
-
1/2 cup of roasted crushed walnuts (chunky).

1/4 teaspoon – drops of sesame seed oil (optional

7-8 whole dried red thai chili (optional)

1 tsp cornstarch to 4 tsp of water solution (optional; use as a thickener)

Preparation & Cooking Steps

Pre-heat frying pan to medium-high

Add cooking oil

Add garlic, dried chilies and sugar – stir fry until garlic and chilies are lightly toasted and fragrant

Add asparagus and toss and stir fry for about 40 seconds

Add salt and Green Curry Paste – stir to mix the flavors for about 40 seconds

Add soy sauce, toss to mix in flavors.

Set the heat to medium

Mix in cornstarch/water solution (if needed) to thicken the sauce. Stir to incorporate

Add the toasted walnuts and stir to incorporate.

Turn off the heat
