Yellow Curry Chicken Soup

Ingredients​

8 oz - boneless, skinless, chicken thighs cut into strips

1/2 cup - carrots

1 cup - onion
-
1 1/2 cup - butternut squash (cut into cubes and par-boiled)

1/4 cup – yellow curry paste

1 tbs - fish sauce

1/4 cup - honey
-
10 cup - water

1/4 cup – Asian basil (chopped

Preparation & Cooking Steps

Pre-heat pot to medium high

Add curry paste and coconut milk; cook until simmer

Add chicken and honey; stir until cooked

Add carrot, onion, butternut squash and fish sauce
-
Cook for about 60 seconds

Add water; bring to a boil
-
Add any salt to taste

Serve garnished with Asian basil
