Yellow Curry Chicken Soup

"This is our version of the quintessential Thai curry soup. Delicious and simple to make.""

Ingredients

  • 8 oz  - boneless, skinless, chicken thighs cut into strips

  • 1/2 cup - carrots

  • 1 cup - onion

  • 1 1/2 cup - butternut squash (cut into cubes and par-boiled)

  • 1/4 cup – yellow curry paste

  • 1 tbs - fish sauce

  • 1/4  cup - honey

  • 10 cup - water

  • 1/4 cup – Asian basil (chopped

Preparation & Cooking Steps

  • Pre-heat pot to medium high

  • Add curry paste and coconut milk; cook until simmer

  • Add chicken and honey; stir until cooked

  • Add carrot, onion, butternut squash and fish sauce

  • Cook for about 60 seconds

  • Add water; bring to a boil

  • Add any salt to taste

  • Serve garnished with Asian basil
