Pour it over your grilled veggies or grilled chicken/turkey, etc. This curry sauce is super versatile. Servings: 3
Ingredients
3 tbs CurryFresh fresh curry paste
1 tbs cooking oil
1/2 of medium onion (fine dice)
1 tbs minced garlic
1 tbs minced ginger
1 cup of coconut milk
1 1/2 tbs of sugar
1 tsp salt (or to taste)
1/2 tsp lemon juice
1/2 tsp fish sauce (optional - to taste)
1/4 cup of water
Directions
Pre-heat sauce pan to medium/high
Add 1 tbs of cooking oil
Add ginger and garlic and stir until fragrant (15-20 seconds}
Add the finely diced onion and stir until partially cooked
Add 3 tbs of curry paste, then add 1/2 cup of coconut milk to center of pan
Stir the paste & coconut milk together with the rest of the ingredients
Add 1 1/2 tbs of sugar & 1 tsp of salt
Add 1/2 tsp of fish sauce (optional)
Add a squeeze of lemon juice
Bring to simmer
Add remaining 1/2 cup of coconut milk
Bring to simmer, then serve
Add a bit of water if sauce is too thick
