Lemongrass Chicken

A South East Asian Classic. Servings: 4

Ingredients
2 oz lemongrass paste
2 oz onion
3/4 oz fresh cilantro (or Thai basil)
1/2 oz fresh ginger root
1/4 oz mukrat (kaffir) lime leaf if available
2 tbs olive oil (.75 oz)
1 lb skinless chicken thighs
Salt to taste
Directions
Make the lemongrass rub (lemongrass, onion, cilantro, ginger, lime leaf, olive oil) with a food processor
Cut the chicken thighs into strips
Marinate the chicken with the lemongrass rub. Add salt. Marinade for a minimum of 30 minutes
Grill the chicken to 165 F internal temperature
Serve hot with cooked rice and simple vegetable salad
Pork chops, pork shoulders or tender cuts of beef are excellent alternatives to chicken. This grilled chicken is excellent in a Vietnamese Banh Mi sandwich.
