Lemongrass Chicken

A South East Asian Classic. Servings: 4




Ingredients

  • 2 oz lemongrass paste

  • 2 oz onion

  • 3/4 oz fresh cilantro (or Thai basil)

  • 1/2 oz fresh ginger root

  • 1/4 oz mukrat (kaffir) lime leaf if available

  • 2 tbs olive oil (.75 oz)

  • 1 lb skinless chicken thighs

  • Salt to taste


Directions

  • Make the lemongrass rub (lemongrass, onion, cilantro, ginger, lime leaf, olive oil) with a food processor

  • Cut the chicken thighs into strips

  • Marinate the chicken with the lemongrass rub. Add salt. Marinade for a minimum of 30 minutes

  • Grill the chicken to 165 F internal temperature

  • Serve hot with cooked rice and simple vegetable salad


Pork chops, pork shoulders or tender cuts of beef are excellent alternatives to chicken. This grilled chicken is excellent in a Vietnamese Banh Mi sandwich.
