Green Curry Tilapia Filets

Tilapia filet with a green curry sauce served on top of zucchini and rice. Easy and delicious. Servings: 4

Ingredients
Rice
Butter or cooking oil
2 zucchinis
1/2 inch cube ginger
1 medium sized onion
4 tilapia filets
2 tbs CurryFresh green curry paste
1 cup of coconut milk
Salt/fish sauce
1 tbs sugar
Directions
Wash and then cook the rice.
Cut the zucchini into 1/2 inch cubes, mince the ginger, and chop the onion into 1/4 inch dices.
Add butter or cooking oil to a hot pan. Add the tilapia filets and grill over medium heat for 3 minutes on both sides (longer if needed). Remove from pan and keep warm.
Add 2 tbs of green curry paste and 1 cup of coconut milk to the pan and mix together. Heat the sauce for several minutes until warm. Salt to taste (can be a combination of salt/fish sauce). Add a teaspoon of sugar (to taste).
In a separate (hot) pan add butter or cooking oil. Saute the ginger for +/- 1 minute, then add the onion and saute for +/- 1 minute. Add the zucchini and stir fry for about 5 minutes (or until cooked). Once the rice is done, mix it together with the vegetables and remove from pan.
Serve the rice and vegetables on 4 plates and add a tilapia filet on top. Add the curry sauce on top of the tilapia filet.
Add a slice of lime and fresh cilantro according to preference.
