Ingredients
For the Chicken Marinade:
1 lb chicken cut into 1 inch cubes
Vegetarian alternative: 1 lb paneer cut into 1 inch cubes
2 tbs CurryFresh Masala Curry Paste
1/2 cup plain yogurt
1 tbs minced garlic & ginger
1 tsp salt
1/2 tsp sugar
For the Sauce:
2 1/2 tbs CurryFresh Masala Curry Paste
1 tbs ghee or cooking oil
2 tbs minced ginger & garlic
1 medium white onion finely chopped
1 medium tomato finely chopped
1/2 cup tomato puree
1/2 tsp turmeric (optional)
This will make the sauce more yellow
2 tbs butter
1/4 cup heavy cream or 1/2 cup half/half
Salt to taste
Directions
Place the chicken cubes in a bowl and add all the other marinade ingredients. Mix together. Cover and refrigerate for 30 minutes or more.
Remove the Chicken Marinade from the refrigerator. Add ghee or cooking oil to a deep skillet and add the chicken. Seer until brown and remove from the skillet. Set aside.
Add minced garlic & ginger and saute for 30 seconds until fragrant. Add onions and cook until translucent.
Next add the tomatoes, mix and saute until soft. Add salt to taste and mix all together.
Add CurryFresh Masala Curry Paste. Cook until fragrant.
Add tomato puree, mix, bring to simmer, cover and simmer for another 5 minutes.
Add butter and mix well.
Add the chicken. Bring to a simmer for about 3 minutes. Add the cream and mix.
If needed, adjust thickness of your sauce by adding water.
Add salt to taste.
Serve with rice or naan.
